Thanks to my mum’s recent visit, i’ve found a great solution to a problem that I believe a lot of people in London struggle with: time and options for a healthy breakfast. Thank you mum for the recipe!
This recipe is awesome to start the day and it will help you keep healthy and fit.
Sweet potatoes and avocado mash with Greek yogurt, berries and cinnamon
Depending on your health and fitness goals this will be more or less the portion size for one person:
- One medium size sweet potatoes
- One avocado
- Greek yoghurt
- Cinnamon to taste
- One handful of berries (I suggest blueberries or goji berries)
Preparation:
The day before perfurate the sweet potatoes with a fork and bake them in the oven for 30 to 60 minutes. You can even bake more in one go. This way you’ll have some great superfoods in your fridge ready to consume for a few days.
Prior to your breakfast peel the potato (really easy after baked) and mix it in a bowl with an avocado. Mash it all!
Add Greek yoghurt, the cinnamon and the berries.
Boom! Eat it!
